McCall’s take on the classic snickers bar

Hey there, fellow dessert enthusiasts! Today, I've got a treat for you that's sure to satisfy your sweet tooth while keeping things wholesome and delicious: a gluten-free, dairy-free take on everyone's favorite candy bar—the Snickers!

Picture this: plump, juicy medjool dates, split open and generously filled with creamy peanut butter, then topped with crunchy peanuts. But wait, it gets even better! These little beauties are then dipped in dairy-free chocolate and sprinkled with flaky sea salt for that perfect balance of sweet and salty flavors.

Seriously, folks, just take a look at the inside of one of these babies. Tell me it doesn't remind you of biting into a Snickers bar! And let me tell you, the taste is just as good—if not better.

Here's how you can whip up a batch of these irresistible treats at home:

  • Start with some pitted medjool dates. If yours aren't pitted, simply cut a line to open them up and remove the pit, or pit them yourself.
  • Fill each date with a generous spoonful of your favorite peanut butter. I personally love Trader Joe's peanut butter from Valencia for this.
  • Sprinkle a few peanuts on top of the peanut butter, then gently close the date back up.
  • Now, it's time to melt some chocolate! Create a water bath by boiling some water in a saucepan and placing a heatproof bowl on top. Add dairy-free chocolate chips (about a cup for one batch) and a tablespoon of coconut oil to the bowl, then melt it all together until smooth.
  • Once your chocolate is melted, dip each stuffed date into the chocolate until fully coated, then place them on parchment paper.
  • Sprinkle a pinch of sea salt flakes over each chocolate-covered date for that extra pop of flavor.
  • Pop your Snickers-inspired treats into the freezer and let them set for about 45 minutes.
  • When you're ready to indulge, take them out of the freezer about 15 minutes beforehand to let them thaw slightly.
